Preheat oven to 350°F and line a baking sheet with parchment paper

Arrange Chips across the baking sheet

Top each chip with 1/4 tsp Marinara Sauce
4
Sprinkle with Shredded Cheese on each chip

Broil in the oven for 2-3 minutes or until cheese is slightly browned and bubbly. Remove, let cool, enjoy!

Hey there! I’m Joe and I’m a 28 year old Foodie & Fashionista from New Jersey! I grew up in North Jersey near NYC, but I currently reside in South Jersey with my boyfriend of 8 years. Prior to Covid-19, I was working full time as a Drag entertainer, but with live events on hold, I’ve had extra time to channel my creativity into my food I tend to maintain a Paleo diet so I love cooking foods that are high in Protein and full of flavor! When I’m not cooking, my hobbies include fitness, caring for my 6 cats, and designing/sewing costumes.
If you had to choose 3 kitchen essentials, what would they be? (could be tools or ingredients)
I use Cashews in everything from Cheesecakes to “Bread”crumbs to Queso Dips! They’ve became a staple in my kitchen and can be turned into so many different things!
Dates are another one of those ingredients that I’m obsessed with! Smoothies, Protein balls, & Pie Crusts are just a few of many things I use dates for. They’re the perfect way to add sweetness to any recipe and are also incredibly delicious to eat on their own or stuffed with Almond butter!
Lastly, Chicken is probably the most used ingredient in my kitchen. I cook for 4 people and sometimes go through 10 lbs of Chicken a week! One time I even made a Cashew Crusted Chicken meal w/ Chopped Dates which allowed me to combine all my favorites in one dish
How did you get started with cooking?
In 2010 I went through a Weight Loss Journey where I lost nearly 100lbs. It was nice to loose the weight, but I did it without any food knowledge which ended up leading me to fad diets and borderline malnutrition. I realized the only way to truly be health is to educate myself and expand my knowledge on nutrition, cooking, and what to put in my body. 10 years later, its became a lifestyle and I’m so happy I took time to focus on food!
What is it about cooking that you love? Why do you come back to it everyday?
I love knowing what’s in my food, so finding ways to create something from scratch using minimal ingredients, but still packing it with flavor is a fun challenge that I’m always up for. Some of the strangest combinations end up being the most tasty so it’s always fun to see what you can come up with! It also allows me to keep myself healthy and hit my nutritional goals.
What keeps you hungry? What drives you to keep trying to up your game?
For the first time in my life, I have both nutritional and fitness goals. Prior to Covid-19, I tried my best to eat clean, but exercise was almost non-existent in my daily routine. I’m active while performing on stage, but that doesn’t exactly constitute for an exercise plan
Since Quarantine started in March, I’ve stuck to a 90 minute exercise plan complete with both strength training and cardio, at least 6 days a week. I’ve honestly eaten the most I ever have in my entire life, yet I’m the best physical shape I’ve ever been. Seeing the results of the work I put in both physically and in the kitchen working in tandem pushes me to continue working on myself and getting creative with my recipes!
What’s your favorite cooking/food related memory or story?
So one time my boyfriend Jimmy and I took a flight to Las Vegas to get a Bloody Mary and ended up not even getting it! We literally took a 6 hour plane ride to Vegas to pull an all nighter, explore the strip, get this “Famous” Bloody Mary, and just have a silly night. We ended up having so much fun exploring the strip that we lost track of time and had to leave before we were able to get to the Bloody Mary It’s still one of my favorite nights of my life to date! I’ll just have to just get the Bloody another time🤷🏼♀️
If you could choose one thing that you want to get better at, what is it?
Trying more exotic vegetables and spices. I tend to use what I think is a good “variety”, but that variety is still only limited to what I know and I know there’s so much more out there to try!
Do you have a love/hate relationship with any aspect of cooking?
Baked Goods! I love making and eating them, but I hate that I can eat an entire tray of brownies to myself in one night! And also the dishes, but that might be more of a hate/hate relationship.
What is your biggest dream that you have yet to accomplish?
My boyfriend and I have 6 cats and are huge cat lovers! Currently our next life goal is to start a nonprofit helping to get cats off the street and finding them homes. We’re actually in the process of making over our basement to get it started, but eventually we’d love to raise the funds to build and run a full on animal shelter for cats!
How did you first hear about Wilde Chips? What did you think about them?
The first time I saw them was at my local grocery store and I was intrigued but I didn’t purchase them quite yet. I was curious, but I didn't really know the benefits and just with my normal grain free chip. After learning about the protein content and all the fun flavors, they peaked my interest and I eventually got to try them! Fast forward to now when I can house an entire bag of Chicken & Waffles Chips in one sitting.
Why would you choose Wilde Chips over other salty snacks?
The ingredients are clean, the protein content is great for my active lifestyle, and all the varieties are all delicious! Whether you’re eating to fuel your body or to feed your tastebuds, Wilde Chips are the perfect balance of healthy and filled with flavor!
What was your inspiration for this recipe? Did you start with wanting to use Wilde Chips or did you start with the recipe and thought Wilde would go well with it?
I LOVE anything mini and wanted to create something adorable, but practical for people to make. I tried to recreate a familiar dish, but with a flair that’s intriguing and new to people. The thought of a “Chicken Parmesan Chip” was so fun to me! Everybody loves Chicken Parm, but now you’re adding crunch and it comes in bite size pieces?!?! I’m Sold! It’s a fun and tasty way to transform a classic dinner dish into an adorable hors d’oeuvres!
